I have had a lot of fun in the recent year by getting a small club, usually from lower divisions of top leagues (this you can even create your own one, maybe with the n. of stars of the smallest team in the league to be even more challenging), and then restrict my transfers on only a specific nation and history related ones (in bad and in good ways, not important), just near, or with any relation I could find, trying to avoid more than 1 big nation. e.g. I made a team of Italians, Austrians, Swiss and Hungarians, or one from the balcans. Fun fact, last year I made a team of Russians and Ukraines (and Belarusians). It's fun, you won't be getting the same high rated players, and you usually develop almost totally talents from weird leagues, and use a lot of academy which is always cool. I play it at max difficulty, and by empowering both keepers to 65-70, and decreasing both shot power to 44 (it is madly high, I feel like 44 it's more realistic, but free kicks seems way harder to score), and that's it.

Do an RTG with the worst team in the lowest english division (league 2) and take that team to the PL and try challenging for the CL. To make make the challenge more difficult, try only buying players that play in the league you are in (No players from abroad or in higher divisions!).

Move all TOP clubs to same league (prem best since alot of cup games) and then start with another mid/low team in the same nations lower div. No extra money and try to win that league
